Cheeseburger Soup
The cold weather has given me a hankering for a good soup and what better than cheeseburger soup! I only had two baking potatoes in the house so I improvised. Here is what I did. I am recording it here because I thought it turned out really good!
2 pounds ground meat (beef, chicken, turkey, pork, venison, whatever suits you)
1 small onion, diced
3/4 cup diced carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter, divided
3 cups vegetable or chicken broth
2 peeled and diced potatoes
1/4 cup all-purpose flour
1/2 large block velveeta cheese
1-1/2 cups milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
