Egg Salad
This is a recipe card my mom wrote out, listing it as a recipe from Taste of Home.
3 oz cream cheese, softened
1/4 c mayonnaise
1/2 t salt1/8 t pepper
1/4 c finely chopped sweet red peppers
1/4 c. finely chopped celery
1/4 c sweet pickle relish, drained
2 T minced fresh parsley
8 hard boiled eggs, chopped
Mix cream cheese, mayo, salt and pepper, mixing til smooth. Add red pepper, celery, relish and parsley. Fold into eggs. Refrigerate until ready to serve.
