Granola

4 c old fashioned rolled oats
2 c sweetened, shredded coconut
2 c sliced almonds
3/4 c vegetable oil
1/2 c honey
1-1/2 c dried apricots, diced
1 c figs, diced
1 c dried cherries
1 c dried cranberries
1 c roasted cashews

Preheat oven to 350 degrees.  Toss oats, coconut and almonds in large bowl.  Whisk together oil and honey.  Pour the liquids over the oat mixture and stir with a wooden spoon until everything is coated.  Pour into a 13" x 18" baking sheet.  Bake, stirring occasionally, until mixture is a golden brown, about 45 minutes.  Remove from oven and cool stirring occasionally.  Add apricots, figs, cherries, cranberries and cashews.  Store in and airtight container.
