Poached Salmon

 During the time when we had a freezer packed with salmon, we frequently looked for new ideas of how to cook the salmon.  This one was a winner.  


3/4 t ground ginger

1/4 c. sparkling wine/champaign

1/4 c. soy sauce

1/3 pound filet salmon


Preheat fry pan to medium high.  place skinless filet directly onto pan.  Immediately sprinkle ginger evenly over the fillet.  Immediately pour soy sauce over filet. Cook for 30 seconds, or until salmon has nearly no raw spots on the top.  Cover pan if you need to speed up the cooking to avoid the fish from going dry.  Makes 1 serving.
