Pumpkin Cookies

 You know those things you eat that are really good so you get the recipe, then your version does not taste as good as the original.  Well that was this recipe for me.  Katie Progar made these.  They were soon good.  They were soft and tasty.  My version, well, they just did not compare.  But, I still have hope so I am keeping the recipe here for future attempts.  


1 c butter

1 c sugar

1 c pumpkin

1 egg

1 t vanilla

2 c flour

1 t baking powder

1 t baking soda

1 t cinnamon

1/2 t salt

1/2 c chopped dates or raisins

1/2 c chopped nuts


Icing:

1/2 c brown sugar

1/4 c milk

3 T butter

3/4 t vanilla

1 c. powdered sugar


Cream butter.  Gradually add sugar.  Add pumpkin, egg and vanilla.  Mix well.  Add flour, bp, soda, cinnamon and salt.  Stir in chopped dates/raisins.  Drop by teaspoon full onto cookies sheet.  Bake at 375 for 10-15 minutes, or until golden brown. Cool and spread icing on top of cookies.  Makes about 50 cookies.  


Icing:  Combine brown sugar, milk and butter in saucepan.  Cook for two minutes.  Remove from heat and let cool.  Stir in vanilla and powdered sugar.  If icing seems too thick, add small amount of milk.  If the icing is too thin, add powdered sugar.
